Visiting Cake

A Pound Cake made with New Era Olive Farm EVOO instead of butter. The olive oil makes for a very delicious and moist pound cake. Enjoy with hot tea, hot cocoa, or a hot coffee.

Yield: 12-16 servings

Ingredients:

-2 cups sugar
-1 cup New Era Olive Farm Extra Virgin Olive Oil
-1 tbsp. vanilla
-5 large eggs
-3 cups all-purpose flour whisked with 2 tsp. baking powder and 1/4 tsp. salt
-1 cup milk


For Glaze:
-1 1/2 cups confectioners' sugar
-1 tsp. vanilla extract
-3 to 4 Tbsp. water


Preheat the oven to 350 degrees Fahrenheit. Butter and flour and angel food or Bundt cake pan. Beat sugar, oil and vanilla until well mixed. Add eggs to this mixture one at a time, beating well after each addition, and beat until thick and lemon colored. Add the flour mixture alternately with milk, beating until just combined after each addition. Pour the batter in the prepared pan and bake for 60 to 70 minutes or until the cake tester inserted halfway between the center and edge comes out clean. Let the cake cool in the pan for 10 minutes, then remove and let cool completely. This cake freezes unglazed for up to 3 months.

To gild the lily, prepare the glaze by whisking the confectioners' sugar, vanilla and water together and drizzle it onto the cake after it cools.

Slow-Cooked Collard Greens in New Era Olive Farm EVOO

A southern staple and tradition, Collard Greens get even tastier when slow-cooked in New Era Olive Farm EVOO.

Yield: 4 servings.

Ingredients:
-1/2 cup New Era Olive Farm EVOO (Extra Virgin Olive Oil), plus more for drizzling
-8 garlic cloves, thinly sliced
-1/2 teaspoon crushed red pepper flakes
-2 bunches collard greens, ribs and stems removed, leaves torn into 2" pieces
-Kosher salt
-1 tablespoon (or more) apple cider vinegar
-Generous pinch of sugar


Preparation:
Heat 1/2 cup New Era Olive Farm EVOO in a large saucepan over medium.  Cook garlic and red pepper flakes, stirring often, until garlic is golden, about 4 minutes.

Add collard greens to saucepan a handful at a time, stirring until each addition is wilted before adding the next.  Season with salt and add 1 cup water.  Bring to a simmer, then reduce heat so mixture is at a very gentle simmer.  Cover and cook, occasionally removing lid to stir, until greens are tender and very dark green, 1 to 1.5 hours.

Let cool slightly, then stir vinegar and sugar into greens.  Transfer to a serving bowl and drizzle with more New Era Olive Farm EVOO and a splash more of vinegar if desired.

Dressing or Dip

A homemade and great dressing and/or dip made with no salt or spices. Great on salads or to serve with fresh bread or crackers.  This dressing/dip is especially great for diabetics.

Ingredients:
-1/4 cup Arugula leaves
-2 Tablespoons fresh basil
-1/4 cup almond slivers
-3 Tablespoons of lemon juice
-2 Tablespoons of New Era Olive Farm EVOO
-1/4 cup fresh parmesan cheese


Using a food processor, add the Arugula leaves, basil, almonds, and lemon juice.  While it is running, add the New Era Olive Farm EVOO and fresh parmesan cheese.  Store any leftovers in refrigerator.

EVOO Ice Cream

Trust me on this one, olive oil ice cream is out of this world delicious.

Ingredients:
-Vanilla Bean ice cream
-New Era Olive Farm EVOO
-Sea Salt


Vanilla Bean Ice Cream drizzled with New Era Olive Farm EVOO and then top it off with a sprinkle of sea salt.  If you really want to spice your ice cream up, try sprinkling with infused sea salts such as chipotle or a citron to add an extra bite to the taste.

Cooking with New Era Olive Farm Extra Virgin Olive Oil

A common question we receive is what can you cook with olive oil?  Many people are just not used to cooking with olive oil and have no idea how many items you can actually cook using olive oil.

Extra Virgin Olive Oil (EVOO) can be used on the following:
-Vegetables (Simply drizzle your fresh vegetables with EVOO and cook in a skillet, in the oven, or on a grill.)
-Beef & Chicken (Marinate your burgers and/or steaks or chicken using New Era Olive Farm EVOO and add a sprinkle of salt and pepper. Marinating with the Extra Virgin Olive Oil allows for the meats natural flavors to become enhanced. Cook as usual.)
-Salads (Use EVOO as your salad dressing as a healthy alternative.)
-Dips (Use on bread instead of butter.)
-Grits & Baked Potatoes (This was an accidental discovery simply because we were out of butter, but now we only add Extra Virgin Olive Oil to our Grits and Baked Potatoes.)
